For the premier manufacturer of soft drinks in Taiwan. This family-run company buys European grape juice to produce red and white wine as well as brandy for the domestic market (15,000 cases until now), and is currently seeking a dynamic individual for the winemaking consultancy at its factory. Responsabilités Within the Winemaking & Quality Control Department, you will be responsible for the whole process of winemaking and bottling, the quality control and the training of an assistant winemaker. You will ensure that production goals are met, and style and quality consistently meet consumers' expectations. You will report to the company's CEO. Missions Manage grape juice supplies and actively participate in crush planning with suppliers. Organize and direct winemaking : juice clarification, yeast incorporation, cool fermentation, laboratory analyses, blending, ageing in tanks and barrels. Check before bottling that each wine meets the company's quality standards. Oversee and manage the bottling process : stabilization, filtration, bottling and label accuracy check.
Train the assistant winemaker in all aspects of winemaking and quality control, and supervise a team of four people. Participate in all cellar tasks, such as pumpovers, pomace shoveling, chemical additions, daily tank and barrel checking, brix and temperature recording, general cellar sanitation. Assist in directing activity of staff and provide input into performance reviews.
Monitor all daily laboratory analyses and take appropriate and timely action as needed. Assist in laboratory duties including tank sampling and common winery analysis.
Keep accurate records of the production follow-up on computer (juice receiving, operations on wine, samples analyses, tasting sheets, bottles and barrels inventory…). Decide on the supplies of materials (bottles, corks, labels…) and the facilities/equipment maintenance, within a given budget. Be responsible for budget follow up through monthly reports.
Be in contact with the FDA (Food and Drug Administration of Taiwan) and ISO (International Standard Organization). Assure that the company’s facility and wines comply with all Taiwan’s Department of Health regulations.
Present the activity and the winery to visitors. Act as the wine ambassador of the company towards the media. Profil recherché Education in enology : DNO preferred, or possibly BTS 'viticulture-oenologie'. At least 5 years of experience in winemaking in various countries and type of companies. Complete technical knowledge of all winemaking aspects (blending, biology, chemistry, sensory analysis and microbiology). Experience in quality control following ISO standards. Experience in staff supervision and training. Knowledge of brandy production preferred. Fluency in English. Computer literate. Dynamism, open-mindedness, interpersonal skills.
